Avocado sprout salad

This unusual side salad is really simple to throw together and takes the place of a traditional guacamole on any plate. The spicy/bitter taste of the garden cress and the sweet mint is a great addition to this mix. Be careful to get the right texture, though. You want the avocado pieces softened but still intact. The sprouts will look much more appetizing if they are not complete covered in avocado mash/mush.

The Recipe

Adapted from Jamie Oliver’s 30 Minute Meals. Serves 4 (as a side)

100 g alphalfa sprouts, as fresh as possible.

1 ripe avocado, chopped

1 small box of fresh garden cress

handful of fresh mint

Juice of 1 lemon, to taste

salt, pepper

Mix the sprouts and the avocado. Don’t mash the avocado to much, make sure there are still pieces intact. Add the garden cress and mint. Just before serving add the lemon juice and toss.
