Beautiful Basil Salsa
Pre-made salsa is usually a sludgy puree with coriander & tomato as its dominant taste. And, as is often the case, a homemade version tends to be far superior, in both taste and look.
This is a beautiful basil salsa. It relies more on the taste of red and yellow pepper, than tomato. And the basil acts as a bridge between the spiciness of the chilies, the acidity of the lemon juice and the freshness of the chopped veggies. It is great as a dip for chips, on a sandwich, or as a side with rice and veggie burgers.

4 green onions
1 red pepper
1 yellow pepper
7-8 cherry tomatoes
1 red chili, seeds removed, kept aside
1 green chili, seeds removed
handful of basil, finely chopped
Finely chop all the veggies, by hand or in a food processor. Mix them together. Add the chili’s last, slowly tasting while you do it, to make sure you get the spiciness you like.
If it still needs some bite, add a small amount of the chili seeds chopped finely or additional pieces of red chili.
Add the salt and lemon juice. Lastly, add the chopped basil. You will notice that the basil has this amazing way of bringing the tastes together!
Let the salsa sit for at least 30 minutes for the tastes to mix.
