Parmesan Crisp

This is a pretty easy and quick way to add a special touch to an otherwise simple dish. These crisps can be used as garnish in salads or in soups. We often mix the parmesan with a fresh herb like thyme or oregano, but you can make these with just the cheese. If you want to get really creative, you can roll and shape the crisps while they are warm, they will hold their shape once they cool.

The Recipe:

Parmesan Crisps

1/2 cup of finely grated parmesan

Fresh thyme or other fresh herbs, chopped (optional)

Heat the oven to 200 °C.  Mix the herbs into the parmesan. Prepare a baking tray with some parchment (or wax paper here in germany). Take a generous pinch (approx. 1.5 tablespoon) of the mix parmesan and put it on the tray in a small pile.  You can spread out the cheese so that it will make a crisp 5-7 cm in diameter. Repeat leaving approximately 5 cm between each pile.

Bake for 3 to 5 minutes or until golden. As they cool, they harden into a crisp.
