Baby Spinach & Radish Risotto

A couple weeks ago, we harvested the first fresh vegetables of the season from the urban garden community project which we are part of here in Berlin. We had loads of fresh baby spinach and a couple red and white radishes to cook with. So we came up with this simple spring vegetable risotto. It turned out to be quite a delicious combination. I really like how the slight bitterness of the spinach contrasts with the bite of the radishes to give this dish an interesting twist.

The Recipe

Baby Spinach & Radish Risotto

serves 2

1 large onion

250g Arborio Rice

approx. 700ml good quality vegetable broth

250g baby spinach, washed

2 green onions

a handful of red & white radishes

50g Parmesan cheese

olive oil, salt and pepper

some grated zest of an organic lemon

100 ml white wine

Bring the vegetable broth to a boil. It’s worth using a good kind or even making your own broth, since it will have a big influence on the taste of the risotto. While the broth is heating up, chop the onion roughly and fry it in a large pot with some olive oil on low heat until slightly golden. Add the Arborio rice and fry for 1-2 min on medium heat. Pour the white wine and reduce a bit. Keep adding the vegetable broth spoon by spoon whenever almost all liquid is absorbed by the rice.

While the risotto is cooking chop the green onions and the radishes. Heat a small pan and sear the sliced vegetables in a bit of olice oil on medium heat. Season with some salt and pepper.

Don’t forget to stir the risotto frequently. Cook until the rice has a creamy consistency but is still al dente. After about 20 – 30 min it should be about ready. Now add the spinach, grate the Parmesan cheese and a little bit of lemon skin into the risotto. Season to taste with salt and freshly ground pepper.

Serve the risotto on plates and add the seared green onions and radishes on top. Guten Appetit!

    My risotto recipes are always heavy on the cream and cheese, low on the vitamins, so I’m delighted to find a tempting recipe involving greens. The Stadtgarten project sounds very intriguing too!
